The Astral Project 2019 Sacc-Nat
Style: Fully certified biodynamic bottle fermented Pétillant Naturel or Pét Nat.
The inspiration: To be a playful, pretty uncomplicated wine to be shared among good friends.
Winemaking: Predominately Shiraz, which was picked and pressed, with small volumes of Gewürztraminer and Pinot Gris added to increase the floral lift and add notes of watermelon on the palate. It was bottled while still fermenting to preserve the bubbles from the primary fermentation (most other sparkling wines the bubbles come from a secondary fermentation) and released col fondo or with sediment.
Cellaring: This playful wine is designed to drink within the first few years of bottling while it retains its vibrancy and elegance.
Food pairing: At brunch with fruit salad.
