'The Astral Project' 2019 Sacc-Nat
Style: Bottle fermented Pétillant Naturel or Pet Nat.
The Inspiration: To be a playful, pretty uncomplicated wine to be shared among good friends.
Winemaking: Predominately Shiraz, which was picked and pressed with small volumes of Gewürztraminer and Pinot Gris added to increase the floral lift. It was bottled while still fermenting to preserve the bubbles from the primary fermentation (most other sparkling wines the bubbles come from a secondary fermentation) and released col fondo or with sediment.
Cellaring: This playful wine is designed to drink with in the first few years of bottling while it retains its vibrancy and elegance.
Food Paring: At brunch with fruit salad.
