
2018 Upwelling Cabernet Sauvignon
Style: Super approachable, rich and generous. This accessible style of Cabernet has a little extra bottle age to help the fine tannin structure mellow.
The Inspiration: Those in the know realise the best places for Cabernet in the Limestone Coast are not from where you would first expect.
Selected from secret spots around the region which might vary from season to season. Our 2018 vintage comes entirely from Mount Benson. The focus is on varietal expression and the notion that Cabernet should taste like Cabernet. It was kept on its skins for 10 days and pumped over three times daily before spending 12 months in French oak.
Tasting notes: A cool climate and approachable Cabernet with dill, dried rosemary, cassis, and bright blue fruit.
Cellaring: We have carefully aged this wine in the winery so it is drinking well now but could easily be enjoyed for up to 10 years if you are patient enough.
Food Pairing: Skip the chilli with this wine and instead opt for roasts and BBQ cuts – lamb is especially perfect. A great wine for roast night with all the trimmings.
