
2019 Samphire Skin Contact White
Style: Medium to full bodied textured white.
The Inspiration: Inspired by travels in Georgia, this wine is made in a traditional Eastern European style but with the modern touch of using varietals that thrive in our Australian climate.
Winemaking: The Samphire is a Skin Contact Chardonnay produced from fruit from a single site in Robe. It was fermented into a ceramic egg and gentle extraction was obtained by hand-plunging the cap. The wine was left on skins un-sulphured for six months. After gentle basket pressing it matured in barrel for a further six months.
Exotic on the nose, the wine shows classic Chardonnay stone fruits, while the time on skins brings lifted lemongrass and ginger.
Cellaring: This wine is drinking well now while it displays youthful aromatics, however we expect that with its tannin structure and texture, it will develop into a more complex style over 2 to 3 years.
Food Pairing: This wine is a white that can stand up to foods normally paired with red wines. Try it with any duck dish (not too spicy), parfait of chicken liver or a rich stock-based lobster bisque.
