Style: Charmat Pétillant naturel or Pet Nat
The inspiration: To be more experimental with our winemaking with refection of Belgfium beers. Slightly sparkling wine with savoury notes of a olives and cured meats bring in the rhythm of this wine while rosemary and Sage play the melody.
Winemaking: Petite Verdot was picked lean 24 hours cold soak then pressed and sterile filtered to remove any indigenous yeasts. Brewers strain of Brettanomyces was added to the juice and fermented in pressurised tank to preserve the natural bubbles before bottling under pressure.
Cellaring: With a high pH and no SO2 this wine will develop in the bottle becoming more savoury over the next few years like the great Brett beers from Belgium.
Food Paring: Light gamey dishes, or as an accompaniment to your favourite charcuterie board.
